Homemade Miso Soup, Saratoga Springs

Kiyo and I were craving miso soup a few weeks ago, and I already had a box of vegetable stock at home, so we bought a packet of miso paste and made our own. We even bought tofu, which I don’t normally cook with.

We heated the vegetable broth and mixed in soy sauce, miso paste, and sriracha. Then we added chopped white onion, sliced bamboo shoots, and the tofu. To top it off, we added some chopped chives and then we dug in. It was just as good as what you’d expect at any upstate New York Asian restaurant, and more fun because we were able to personalize it (I added more soy sauce and hot sauce to mine).
